Chewy Molasses Cookies: Perfect for Fall

Chewy Molasses Cookies are thick, chewy, and sweet with the warmth of pumpkin spice and molasses. Serve them with coffee for the perfect fall treat!

Recipe for Chewy Molasses Cookies

1 cup of butter, softened
1/2 cup of melted coconut oil
2 eggs
3/4 cup molasses
2 cups sugar
4 cups flour
1 tsp. salt
1 Tbs. pumpkin spice
Put about 1/2 cup of sugar in a bowl and set aside.

With a mixer on low, blend together the butter, oil, eggs, and molasses sugar, and pumpkin spice.

Slowly add the flour 1 cup at a time until the dough becomes too stiff for the mixer. Then finish mixing by hand if needed.

Take some dough in your hand and roll it into a ball about the size of a golf ball. Then roll the ball of cookie dough in the sugar you saved in the bowl. Place the sugared ball of dough on a cookie sheet and flatten it with the bottom of a glass.

Bake at 350 degrees for 13-15 minutes.

The Origins of This Recipe

The truth is, I’ve had this recipe for years and years. It’s written on a white index card in my handwriting. I have no idea where it came from.

But Chewy Molasses Cookies are my husband’s favorite. The house smells amazing while they’re baking. They hold together when dunked in coffee and milk.
