My mother-in-law gave me this recipe for Chocolate No-Bake Cookies at my bridal shower. I was only 21 years old, still in college, and ready to get married. She said it was my husband’s favorite cookie. She was right. And almost 30 years later, I still have all of those wonderful family recipes shared with me at my bridal shower. I still have this cookie recipe labeled as my husband’s favorite.

Chocolate No-Bake Cookies
Chocolate No-Bake Cookies are a super quick, super easy sweet treat that can be made without turning on the stove!
3 cups of oats, quick-cooking or old-fashioned
3 Tbs. cocoa powder
½ cup of shredded coconut
½ cup of your favorite nuts, chopped
2 cups of small marshmallows (optional)
I’m not a fan of marshmallows, so the photos of the cookies in this post are sans-marshmallows. ?
2 cups of sugar
½ cup (1 stick) of butter (not margarine – the cookie won’t set right if made with margarine)
½ cup of milk
1 tsp. vanilla extract
In a large bowl, combine oats, cocoa powder, coconut, nuts, and marshmallows.
On medium heat, bring the sugar, butter, and milk to a boil. Remove it from the heat. Add the vanilla and stir the mixture well. Pour the liquid over the dry ingredients in the large bowl.
The cookies are ready to eat when they are solid and stay together when picked up.
It’s tempting to put the freshly-scooped cookies into the freezer to solidify them faster. I’ve done this. But what happens is they freeze a little, then when they’re taken out to thaw the moisture unfreezes and they are sticky and fall apart when picked up. It’s best to let them set and solidify at room temperature.
These light and easy cookies are a great finish to a meal including Chicken Parmesan!
The only thing hard about making Chocolate No-Bake Cookies is keeping your family from grabbing them to eat before they’re set!
Some ingredients that can be added to create variety in these cookies are dried fruit such as cherries or blueberries, granola or cereal in place of or in addition to oats. Be creative!
