Farmhouse Strawberry Shortcake: Super Simple and Fun!

Various Kinds of Shortcake

I didn’t want just a piece of cake in a bowl topped with strawberries and whipped cream. Something fun and different is needed to break up the monotony of this cold. A parfait will be fun.

Mason jars are great for parfaits and wide mouth pint jars are a perfect size.

There are a lot of variations on the cake portion of strawberry shortcake. In some parts of the country, people make an individual sweet biscuit type of cake. Others like an actual white cake or angel food cake as the base for their shortcake. I like to use my mother in law’s recipe for shortcake.

She calls it Lazy Dazy Cake. It’s a very versatile sponge cake that is super easy to make and it holds up well to the half and half that I like to pour over my strawberry shortcake. It also is the closest I’ve come to recreating my great-grandmother’s strawberry shortcake, which was AMAZING.

How to Make Farmhouse Strawberry Shortcake

Farmhouse Strawberry Shortcake

2 eggs
1 cup sugar
1 tsp. baking powder
1/2 tsp. salt
1 cup flour
1/2 cup scalded milk (milk that has been brought to
the boiling point, then removed from heat)
1 Tbs. butter
1 Tbs. coconut oil
1 tsp. vanilla extract
1 tsp. almond extract
1 pint half and half
Fresh strawberries and Reddi Whip

First, preheat oven to 350 degrees. Next, in a medium bowl, slowly add sugar while beating the eggs with a mixer on medium speed until thick.

In a large bowl, whisk together sugar, baking powder, salt, and flour.

Then, with the mixer on slow, mix beaten eggs into dry ingredients.

In a glass measuring cup, heat milk, butter, and coconut oil to boiling in the microwave. Add vanilla and almond extracts, and slowly pour into the cake batter while mixer is on medium speed. The batter will be thin. Pour the batter into a baking parchment-lined or non-stick 9×9 pan and bake at 350 degrees for about 20 minutes. Cool on a wire rack.

Next, cut the cake into one-inch cubes. Slice the strawberries. Put some cake cubes into the bottom of a wide-mouth pint Mason jar. Add a layer of sliced strawberries, then add another layer of cake and another layer of strawberries.

Finally, pour the desired amount of half and half over cake and strawberries in the jar and top with a generous amount of Reddi Whip. Then garnish with a couple of strawberry slices.

This recipe makes about four pints of Farmhouse Strawberry Shortcake.
