It’s the weekend. We’re exhausted. The latest calf born at our acreage is struggling to nurse. He’s a big calf and Momma Cow’s udder hangs pretty low. He’s needing to be taught to bend down to nurse and he’s fighting it. So we’re milking Momma Cow and bottle-feeding Big Baby just to keep him nourished and her comfortable while this hiccup gets resolved.
The Hubs and I are in our 50s and we’re literally wrestling this 94-pound stubborn bull calf three times a day. He’s even pooping on us to show his disdain for this situation. As of this writing, he’s finally nursing on his own and even running and bucking with his tail in the air. He’s got it figured out and is going to be fine.
We need chocolate. I’m too tired and dirty to run to the store. A simple chocolate sheet cake is what we need, made with items I have on hand.
I don’t want a rich, thick frosting. Something light and fluffy and not too filling.

This is a basic chocolate cake with an old-fashioned cooked white frosting that is light and airy. It’s great for a satisfying that weekend sweet tooth without being too heavy.
How to Make the Fluffy White Icing
This icing is an oldie but a goodie. This frosting isn’t hard to make. Just go slow. The only mildly difficult thing about this frosting is it takes about 7-8 minutes of whipping it with the mixer to get it to the stiff-peak stage. It makes me really miss my Kitchenaid Stand Mixer. I had one for over 15 years and it finally went to that great Kitchen Appliance Place In The Sky. I really need a new one.
This cake is a great dessert after enjoying Crockpot Swiss Steak!
