How to Make Homemade Beef Stroganoff
I make Beef Stroganoff on the stovetop, but it’s also a great slow cooker dish. Just brown the stew meat, add the onions, mushrooms, broth, and tarragon and cook it for about 4 hours on low in the slow cooker. Add the sour cream and heat it through just before serving.
Canned mushrooms can be used instead of fresh. Frozen egg noodles from the store are quite good and are perfect to use if you don’t want to make them yourself.
What I have here for you is a from-scratch recipe that includes homemade egg noodles. Homemade egg noodles are amazing. It’s just good to know how to make them.
First, we’ll start with the beef part of the Beef Stroganoff.
Homemade Beef Stroganoff

1 Tbs. butter
2 Tbs. olive oil
2 lbs. beef stew meat
1 medium onion
1 lb. fresh portabella mushrooms, sliced
2 tsp. beef flavor boullion
1 Tbs. all-purpose flour
1/2 cup sour cream
About 1/2 cup water
8 oz. egg noodles, cooked
Drizzle about 2 Tbs. olive oil into a 3-quart saucepan. Add the beef stew meat to the pan. On medium heat, brown the stew meat. Then add the beef flavor bouillon and tarragon. Salt, and pepper to taste.
Add about 1/2 cup of water to the stew meat. Cover and reduce the burner heat to low and simmer for about 40-45 minutes until it’s tender.
Meanwhile, in a skillet with 1 Tbs. of butter cook the onion and mushrooms until tender but not mushy. Set them aside.
Make the egg noodles while the beef cooks. See the recipe for egg noodles below.
When the beef is tender, add the onions, mushrooms, and sour cream. Stir well and heat through.
Serve Beef Stroganoff over egg noodles.
Or, if you’re wanting to try something different, julienne 5-6 carrots. Sautee the julienned carrots in a skillet in about a tablespoon of butter until tender. Serve the Beef Stroganoff over the carrot “noodles” or other kinds of veggie noodles for a healthier dish.

How to Make Homemade Egg Noodles
I almost always use frozen egg noodles from the store for dishes calling for them. They taste as good as homemade without the effort. But it was snowing when I made the Beef Stroganoff for this article. I wasn’t interested in a 10-mile drive to the store in a snowstorm. So I made my own egg noodles. Homemade egg noodles aren’t difficult. They’re just kind of messy to make.
I do love the thick, chewy texture of homemade egg noodles. They have a rustic look to them with their slightly jagged edges and imperfect texture. As long as your making them, double the batch and put some in the freezer for later.
Homemade Egg Noodles
Homemade egg noodles are thick and chewy with a rustic texture.

2 1/2 cups all-purpose flour
1/3 cup water
2 eggs + 1 egg yolk
1 tsp. wheat gluten
1 Tbs. salad oil
1 tsp. salt
In a medium mixing bowl, add 1 cup of flour and the next 5 ingredients.
Mix well with a wooden spoon until a stiff dough forms.
On a flat surface, sprinkle 1/2 cup of flour.
With the heels of your hands, knead the dough for about 10 minutes until it is elastic.
Sprinkle another 1/2 cup of flour onto a flat surface. Flatten the kneaded dough as much as possible with your hands and place it on the floured surface.
With a dough roller, roll the dough as thin as possible into the shape of a rectangle.
Next, using a pizza cutter cut the dough into strips. Or, use a pasta-making attachment on a Kitchenaid stand mixer.
Heat 3 quarts of salted water to boiling. Place the noodle strips into the boiling water and cook 12-15 minutes until tender.
Drain the noodles in a colander, place them on a dinner plate, and top with Beef Stroganoff.
To freeze homemade egg noodles, just cut them into smaller pieces or roll them into rolls of 4-6 noodles each and place in a plastic freezer bag. Then put them in the freezer. Use them within a year.
