This sweet, smooth glaze balances the briny, spicy flavor of Smoked Corned Beef.
1 cup of Irish Whiskey (Jameson or 2 Gingers are good brands)
1 cup of water
Juice of 1 orange
1/4 cup brown sugar
1/2 tsp. each whole cloves and whole allspice
1 Tablespoon cornstarch
In a small saucepan, add the first five ingredients.
Stir together and simmer on medium heat until reduced by about half.
In a small bowl, add the cornstarch. Take about 1/2 cup of whiskey sauce from the saucepan and whisk it into the cornstarch. Then pour it into the rest of the sauce.
Simmer for about 2-3 minutes more until clarified and thickened.
