A rich, decadent frosting perfect for Pink Champagne Cake.
1/2 cup (4 ounces) white baking chips
1 1/2 sticks of butter, softened
4 Tbs. pink champagne (same as used to make the cake)
3 1/2–4 cups powdered sugar
In the microwave on medium, melt the baking chips. Mix them into the butter well.
Add 2 cups of powdered sugar and the pink champagne. Start the mixer on low gradually increasing speed at the frosting comes together.
Add another cup of powdered sugar. Mix on low gradually increasing speed as it blends into the frosting. Add more powdered sugar and pink champagne as needed to achieve a spreadable consistency.
I leave this frosting white because I think a white frosting looks pretty with a blush pink cake. The pink champagne won’t color the frosting. Add 2-3 of drops of red food coloring if you want a pink frosting.
