Generously butter two slices of sourdough bread.
Grill the bread on one side in a skillet on medium heat.
Generously drizzle Thousand Island Dressing on the non-grilled sides of the sourdough bread.
Then, in a skillet on medium heat warm up the leftover corned beef slices from your Smoked Corned Beef. Sear it until it has a lovely slightly crispy caramelized appearance.
Then place one slice of sourdough bread toasted side down on a foil-wrapped toaster oven baking sheet. Top with the pan-seared Smoked Corned Beef.
Next, top the Smoked Corned Beef with well-drained sauerkraut.
Cover the sauerkraut with three slices of Swiss cheese.
Broil in a toaster oven (or regular oven) on high until the cheese melts.
When the cheese is melted and bubbly, remove the sandwich from the oven.
Top the hot sandwich with the second slice of grilled sourdough drizzled with Thousand Island Dressing and serve hot.
