Sourdough Reuben Sandwich

Stacked with smoked corned beef, melty Swiss cheese, tangy sauerkraut, and rich Thousand Island dressing, the Sourdough Reuben Sandwich is to die for!

Ingredients
  

  • Butter
  • 2 slices sourdough bread
  • 6-8 ounces leftover corned beef sliced
  • 2 slices Swiss cheese
  • ΒΌ cup sauerkraut
  • Thousand Island Dressing

Instructions
 

  • Generously butter two slices of sourdough bread.
  • Grill the bread on one side in a skillet on medium heat.
  • Generously drizzle Thousand Island Dressing on the non-grilled sides of the sourdough bread.
  • Then, in a skillet on medium heat warm up the leftover corned beef slices from your Smoked Corned Beef. Sear it until it has a lovely slightly crispy caramelized appearance.
  • Then place one slice of sourdough bread toasted side down on a foil-wrapped toaster oven baking sheet. Top with the pan-seared Smoked Corned Beef.
  • Next, top the Smoked Corned Beef with well-drained sauerkraut.

  • Cover the sauerkraut with three slices of Swiss cheese.
  • Broil in a toaster oven (or regular oven) on high until the cheese melts.
  • When the cheese is melted and bubbly, remove the sandwich from the oven.
  • Top the hot sandwich with the second slice of grilled sourdough drizzled with Thousand Island Dressing and serve hot.
